“In the dialect there is the history of the people who speak it” and that is why we want to make known an ancient saying of the Sicilian dialect linked to the world of wine and to a native Sicilian white grape variety. We are talking about muscatedda or u muscateddu vrancu, the white muscat or moscato di Noto , considered by many to be the only autochthonous white grape variety in the Val di Noto area. The muscatedda was the type of grape that produced the muscat wine and in the south of the Syracuse area, where vines were cultivated for quantity wine, was a favorite rarity for the table of the vineyard owner.
The vines were scattered throughout the vineyard and hidden from view to prevent thieves from stealing it all together once identified.
The expression used resembles that of a thief who, by sheer luck, immediately finds the hidden muscatedda !

INGREDIENTS:
HOW TO COOK
Preheat the oven to 180°C (160°C fan / gas mark 4). Grease and line the base of a 15cm round cake tin. Beat the butter and sugar until light and creamy. Add the egg yolks one at a time and stir in with the almond extract. Beat well. Sieve in the self-raising flour and ground almonds and mix gently. Beat the egg whites in a clean, grease-free bowl until very stiff and then fold into the mixture. Bake for 50–60 minutes or until a skewer inserted into the cake comes out clean.
