2016 was the vintage of deep red wines. Brunello Prime Donne by Donatella Cinelli Colombini expresses her philosophy of a return to the origins of this designation. In the spring of 2016 the vines budded 15 days sooner than usual, but the grape harvest took place at the beginning of October, more in line with the traditional calendar. This is the first Brunello produced and planned by women. In fact the winery that produces it, Casato Prime Donne in Montalcino, is the first in Italy to be all female staffed, including the wine maker

Grape Harvest The harvest date was chosen by tasting the grapes, an old fashioned method that is although more precise than laboratory analysis. The grapes were picked by hand cluster by cluster. In the cellar the sorting table allowed a further selection of the grapes
Vinification
In truncated cone shaped unlined temperature controlled concrete vats, open on top and with a mechanized punching of the cap. The small dimension of the vats permits the separation of the grapes from different vineyards and the two of these hold perfectly the handpicked grapes of each day. After the alcoholic fermentation the wine stayed 15 days in the vats to macerate with the grape skins.
Aging
In 5 and 7 hl French oak tonneau produced by 3 artisan workshops. The use of small barrels of different provenance and made with different techniques make it possible to increase the complexity of the wine and to choose the wood that is best apt for the wine from each vineyard. The barrel ageing finishes with large 15-40 hl Slavonian oak barrels. Before bottling this Brunello has spent time in the unlined concrete tanks. It has not been filtered.
Home ageing 30-40 years and more. Lay the bottles down, in a cold and dark place. Have the corks changed in Donatella Cinelli Colombini’s winery when the level of the wine begins to descend to the shoulder of the bottle (around 2035)

Donatella Cinelli Colombini considers the Brunello Prime Donne the flagship for her wineries, the first in Italy with an all female staff. This is a masterpiece wine produced in small amounts.
The idea for this wine was born in 1998 when Donatella noticed that the wine tasters for the Italian wine guides were all men. She decided then to reunite a group of great female wine experts asking them to taste, in a blind tasting, the future Brunello from different barrels, and to choose the one they liked the best. In the beginning, Brunello Prime Donne was a bold challenge, a premium red wine traditionally designed for male consumers that bows to the taste of women. Over the years its success with the consumers and the critics has gone hand in hand with the affirmation of the female gender as a buyer of high-end red wines. Today Brunello Prime Donne is exported to 30 countries around the world and is a symbol of courage, ethical values and a challenge to clichés.

CREAMY TUSCAN CHICKEN

This creamy Tuscan chicken recipe is fast, easy, and totally delicious. You will love the creamy sauce with sun-dried tomatoes, basil, and fresh spinach

INGREDIENTS:

  • 2 large chicken breasts sliced lengthwise
  • Salt & pepper to taste
  • 1/2 teaspoon garlic powder
  • Flour for dredging
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/4 cup chicken broth or dry white wine
  • 1 heaping teaspoon Dijon mustard
  • 1 cup heavy/whipping cream
  • 2 cups (loosely packed) fresh baby spinach
  • 1/4 cup sun-dried tomatoes 
  • 1 tablespoon fresh basil chopped

 

HOW TO COOK

Cut the chicken in half lengthwise. Sprinkle with salt & pepper and garlic powder on both sides. Coat in flour. Melt the oil and butter in a skillet over medium-high heat. Once hot, add the chicken and cook for 4-5 minutes/side or until golden. Take the chicken out of the pan and set aside. Deglaze the pan with the chicken broth and Dijon mustard. Scrape up any brown bits and let it simmer for 1-2 minutes. Stir in the cream, spinach, and sun-dried tomatoes. Add the chicken back to the pan. Cook for 5 minutes or until the chicken is fully cooked through and the sauce reduces a bit. Stir in the basil and season with extra salt & pepper if needed. Serve immediately.
