Colour Rosé Champagnes generally have a pink shade that tends to orange: our Diadema selection instead stands out for its authentically pink hue.

Taste Wild strawberries and a wonderful hint of citrus. Complemented by vanilla aromas and mineral tones

Intense in color, the Cuvée Rosée Diadema Selected explodes with red fruits and freshness. This Champagne Rosé complex is a 100% Pinot Noir. The intensely rounded taste is obtained thanks to the aging of part of the wines in French oak barrels. Pinot Noir contributes an extraordinarily intense aroma of wild strawberries and a wonderful hint of citrus. Complemented by vanilla aromas and mineral tones. TUNA CRUDO

 

INGREDIENTS:

  • 1/2 pound sushi grade tuna
  • 1/4 cup extra-virgin olive oil
  • Juice and zest of a lemon
  • Sea salt
  • 1 tablespoon capers

 

HOW TO COOK

Slice the tuna thin, but not too thin. Shoot for about 1/4 inch thick. A tip on cutting cleanly: Draw your (very sharp) knife back towards you to cut, so you only slice in one direction. Sawing through fish makes it raggedy. Arrange the fish on a plate or plates, and distribute the oil, lemon juice, capers, salt and lemon zest around it. Serve immediately,
