Produced only with Nebbiolo grapes, locally called "Chiavennasca", and with local hystoric grapes as Pignola and Rossola. For this new line of wines produced by our farm, we have create particular names that reported to the Camuna civilization. From this civilization we have found, in our vineyards, different finds that testify the presence in Valtellina. Martellina was the instrument used by Camuna civilization in order to affected the rock and get petroglyphs; the most important and famous rock incision found in our vineyards is the Dea Madre, representing the goddess of fertility.

Sommelier's Description

Colour Bright ruby red colour
Scent  Intense scent of wine with a taste of raspberry and a light shade of violet
Taste Armonic, sapid, elegant and persistent flavour. Please note the roundness and the sweetness of the tannins, due in part to the aging in wood, but especially for the assembly of two types of grapes, and therefore of different clones.
Directly owned and followed by the winemaker, Mr. Stefano Nera, with cooperation of those involved in the vineyards, falling on the raetic side from east to west with south exposition to the sun in the production zones of Valtellina Superiore Inferno in the communes of Montagna in Valtellina, Poggiridenti and Tresivio at an altitude between 300 and 450 meters a.s.l. Sandy soil, water permeable, moderatly deep. Wine grapes for this wine comes in part from vineyards with over 60 years, grown on Rittochino terraces, and partly by newer vineyards, worked with giropoggio method. In this area we have planted new cuttings from clonal Chiavennasca selection, carried out by the Fondazione Fojanini. First grapes gives to the wine structure, persistence and seasonings while the other bring fragrance, freshness and a beautiful brilliant ruby red color.

TAROZ – VALTELLINA  BAKED VEGETABLES WITH CHEESE

INGREDIENTS:

  • 400 g potatoes
  • 300 g beans / runner beans
  • 200 g Valtellina Casera PDO cheese
  • 150 g butter
  • 1 onion
  • salt and pepper

HOW TO COOK

Peel the potatoes and boil together with the beans / runner beans. Cook until soft and then drain. Mash together with a wooden spoon to give a coarse purée. Season with salt and pepper. Soften the onion in the butter and add, together with the cheese.
